                      RED POTATO SALAD

 Ingredients:

For the Salad:

  - 2 lbs red potatoes

  - 1 cup celery, diced

  - 1/2 cup red onion, finely chopped

- 1/2 cup fresh parsley, chopped

  - 1/2 cup sweet pickle relish

  - 4 hard-boiled eggs, chopped (optional)

For the Dressing:
  - 1 cup mayonnaise

  - 2 tbsp Dijon mustard

  - 1 tbsp apple cider vinegar or white vinegar

  - 1 tbsp olive oil

    - 1 tsp sugar

  - Salt and black pepper, to taste










 Instructions:

1. Cook the Potatoes:

   - Wash the red potatoes and cut them into bite-sized pieces. You can leave the skins on for extra texture and color.
   - Place the potatoes in a large pot and cover with cold water. Add a pinch of salt.
   - Bring to a boil over high heat, then reduce the heat and simmer until the potatoes are tender but still firm, about 10-15 minutes. Test with a fork; it should easily pierce the potato.
   - Drain the potatoes and let them cool to room temperature.

2. Prepare the Dressing:

   - In a large bowl, whisk together the mayonnaise, Dijon mustard, vinegar, olive oil, sugar, salt, and black pepper until well combined.

3. Combine the Salad Ingredients:

   - Once the potatoes are cooled, transfer them to the bowl with the dressing.
   - Add the diced celery, chopped red onion, fresh parsley, pickle relish, and hard-boiled eggs (if using). Gently fold everything together until the potatoes and other ingredients are evenly coated with the dressing.

4. Chill and Serve:

   - Cover the salad and refrigerate for at least 1 hour to let the flavors meld together.
   - Before serving, taste and adjust the seasoning if necessary. You can add more salt, pepper, or a splash of vinegar to taste.

5. Garnish (Optional):

Garnish with additional fresh parsley or a sprinkle of paprika for color before serving.
